A cabinet that reads fine overnight but climbs during trade has an airflow or load problem, not a thermostat problem. Sweating glass, iced return grilles, tripped breakers and cabinets cycling loudly all justify a look before stock losses and inspection findings force one.
Refrigerant releases, electrical faults and CO2 or ammonia plant are specialist hazards, never open a sealed refrigeration circuit or bypass a tripping breaker to keep a unit running. If stock has spent unknown time above safe temperature, treat it as a food-safety decision, not just a refrigeration one.
